It’s sad to say, but this is the last camping food recap for 2011! Thankfully, the holidays are coming up so I’ll have more food to talk about then…oh, and pretty much every day when G and I gorge ourselves.
As I said before, I was in charge of Friday night. Macaroni and Cheese with a salad. Oh, so very healthy. I got the Mac & Cheese recipe from The Pioneer Woman and I made two 9×13 pans of it (a double batch). We ate it all that night.
You can find the recipe for the Macaroni and Cheese here. Here’s the salad recipe: buy a bag mix and throw in in a bowl (after removing all packaging). Dinner was a success and there was nothing left over…I guess we’re all fat pigs.
After dinner, we ate the S’mores Stuffed Brownies! They were so good, but I forgot to take pictures of them. I scooped out the brownie (after warming it up) and put it in a bowl with vanilla bean ice cream. Delish! Here’s a picture of the uncooked beautiful brownies.
On Saturday morning Laura and Hart made breakfast burritos!
Because G is weird and doesn’t really like bread products that much (isn’t he crazy), he made his without a tortilla. I, on the other hand, ate a plain tortilla and about 30 slices of oranges. I don’t really like to eat in the morning when we’re camping, for some reason. Probably because I usually eat about 3,000 calories at dinner the night before.
Apparently, eating breakfast made Hart really happy, because he soon stole his daughter’s hat and was walking around camp like this:
After going on an unintentional 3 hour hike, it was time for lunch. A true campfire meal of hot dogs cooked over the fire!
G almost burned his face off, but still managed to make some pretty nice looking chili dogs.
My mom made homemade relish for them too! I felt bad for my little Jack (he was cold and his hips are getting worse) so I made him a hot dog.
And I cut it up too…

After sufficiently gorging ourselves, I went to take a nap. Soon after, G joined me and brought the remaining S’mores Stuffed Brownies. I know, he’s great! I didn’t take pictures of us eating them because it was too embarrassing. We just had the tin-foil baking dish and forks.
A couple of hours later, it was time for dinner. A baked potato bar with shrimp salad! Good job mom and Tim! This is what mine looked like:
Just a baked potato, cottage cheese, real cheese, red peppers, salt and pepper. It was good. This is what Tim’s looked like:
I think he had basically everything on the baked potato and that’s his shrimp salad next to it. Fancy!
And then it was dessert time. Because it’s almost time for me to turn the big 3-2, my mom thought we could celebrate while we were camping and everyone was together. She got a cake with a lot of frosting. Hells yeah!
It’s basically the best cake ever because it has a picture of baby CTW on it! Everyone should have a cake like this (with a picture of me on it). It was so good and I had a corner piece with flowers on it…I was trying to see if I would go into a diabetic coma. I didn’t.
That night it rained a lot. Jack was in the trailer with mom and Tim and G and I could not sleep. I got up at about 3:00 am to finish my book and G decided he wanted to eat cake (I knew he was planning to gorge himself on cake when he insisted on putting the leftover cake in our car with forks). G got the cake and brought it in the tent. We were also hoping a bear would come by to join us.
Before we knew it, the cake was gone…the last bite:
Wow, that’s embarrassing. What’s worse is that after we ate it, we went to sleep. No, G did not have a heart attack…but we did have problems fitting into the car to drive home.
And of course, we were starving for breakfast the next day! We had another egg scramble, breakfast burrito sort of thing. Emily and Jamison had planned on making some sort of egg muffin thing, but decided to try to use a bunch of the leftovers instead.
