Because I’m really lazy and don’t like cooking that much, I usually only prepare 1 meal for the entire week. My mom always made enough food to feed the entire neighborhood and I kind of picked up that trait. I find that I’m always doubling or tripling recipes because I think there won’t be enough and most of the time it looks like I’m trying to feed an army. Fortunately, I don’t mind eating the same thing every day (and kind of prefer it) and G doesn’t have any taste buds so he doesn’t even notice. Yesterday, I prepared a ginormous pot of turkey chili taco soup.
I found the recipe here and we love it! I actually made it last week too. The recipe is the kind of recipe where there is minimal effort and you mostly just dump stuff in a pot. I love that. I usually make it late on Sunday morning and let it cook for a few hours. It’s very filling and I guess kind of healthy too…shocking for us fat pigs.
This pot will last us at least until Wednesday, but hopefully through Thursday. We’ll see.
