What’s for Dinner?

I know I’m being WAY too Suzie Homemaker lately and I apologize.  But I wanted to show you the white trash meal I created on Friday. It was actually pretty good, too.

Yes, those are tater tots.  You can find the recipe for Mexican Tater Tot casserole here.  I made this on Saturday and G ate the whole thing by Sunday.

It’s really easy to make (even for a disaster like me) and if you don’t eat like a family of 12 (like G and I do), it would probably last more than a day.  So what are you having for dinner?

Oh and do you like that HUGE “The Oregonian” magnet on the fridge?  Thought so.  I should be on HGTV’s Design Star.

Hey, hey….. met your Mom and Tim this weekend camping at Beverly Beach and figured out I graduated with your Dad from Paly in ’66. F’ing crazy! One of our daughters also went to Grant with one of your neices. We should tater tot together some weekend!

Wow. My boyfriend would L.O.V.E this. Seriously, I think if I show this to him he will beg me to make this. If I do… I’ll let you know how it went down. Yes, it WILL be drenched in hot sauce too 😉
